Lamb Crust

Ingredients

  • 1 Rack of Lamb (22-24oz)

  • 1 Cup (4oz) Hobi’s Salt & Pepper Crackers (crumbled/ground)

  • ½ Cup Panko Breadcrumbs

  • 1 tsp Herbs de Provence

  • 2 Tbsp Parmigiano Reggiano

  • 2 Tbsp Dijon Mustard

INSTRUCTIONS

  1. Clean Lamb Rack of any silver skin fat, rub with Dijon, and set aside. 

  2. Mix all dry ingredients together, set aside.

  3. With Lamb Rack coated with Dijon, press mustard side into Cracker mixture till well coated. 

  4. Place on oven-safe pan and cook in the oven at 400F for 10-15 minutes or until crust is a golden brown or desired temperature.
